Oh, Peanut Butter Banana sandwich, how you remind me of childhood mornings when sleepiness could be cured with one bite of you.
As for the star ingredient, pan frying bacon with a panini or bacon press makes for a super evenly crisped flat bacon strip, ideal for the morning's project.
I won't soon grow out of eating PBB's, but what if there was a way to elevate them to a grown up's tastes? Lightning struck this morning when I was craving the classic eggs/bacon/hash-brown/fruit breakfast and a PBB sandwich. My stomach is only the size of my fist, so I had to find the ultimate combination of ingredients I craved the most. Bacon came first, then peanut butter; there was only one possible conclusion. Adding a third B to the PBB.
Two soft whole wheat bread slices are spread with a light coating of PB ALL the way to its edges. Aaaall the way. Is it a guy thing to not spread things properly? Or am I a little compulsive with having condiments reach the crust?
Split the banana lengthwise, then crosswise to make four bread long pieces of banana. Pile the B on the PB in an obsessively organized column.
After letting the cooked bacon cool on paper towel, take two pieces, rip them into bite sized pieces and arrange them mosaic style onto the second PB slice so that the entire surface is covered. Slap both slices together and squish down a little to ensure the bacon is properly introduced to the banana.
Unless you're trying to photograph the insane concoction, I don't recommend cutting the sandwich at all. If you can't see the bacon, your mind will try and trick you the moment before you take the first bite. It'll be thinking "this is a normal peanut butter and banana sandwich", then Vlam! The bite that follows with knock your socks off with an explosive blend of salty sweet.
Not for the faint at heart, because your arteries may not be able to take it.
